Not only is the first harvest said to be the best in terms of flavour, but it also results in the highest content of the main catechins EGCG and ECG found in any green tea, in addition to containing a significant proportion of valuable non-methylated catechins and one of the highest amounts of total catechins.

The sun-drenched summer harvest is very bitter, extremely strong and is high in methylated catechins. Interestingly, ginger and benifuuki seem to have a synergistic effect.
