Tokunoshima Seicha

This second-generation family-run farm is led by Yuki Toyumura (豊村友樹), one of the Japan's leading producers of Benifuuki. The tea farm is located on the picturesque and incredibly sunny island of Tokunoshima, and specialises in Benifuuki tea. With 15 hectares dedicated to Benifuuki, this is the largest single farm for this green tea variety in all of Kagoshima.

Tasting Notes

The Benifuuki cultivar is a cross between Camellia sinensis var. sinensis and var. assamica. In the young leaves of the first harvest, it develops the highest levels of specific bitter compounds (EGCG, ECG) of all green tea cultivars, further enhanced by the exceptionally strong sunlight on the Pacific island of Tokunoshima. As a result, the tea has a robust, subtly bitter character, while remaining natural and well balanced.

Benifuuki tea is a relatively new Japanese green tea variety, valued in particular for its remarkable nutrient content. It has the highest catechin levels of all green teas (especially EGCG, ECG and methylated catechins such as EGCG3"Me / -4"Me) and is characterised by a robust, refined bitter note. Despite its high concentration of beneficial bitter compounds (catechins), premium Benifuuki remains well balanced and harmonious in flavour.

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, all the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Special features in location, cultivation and processing

The small, remote Pacific island of Tokunoshima lies just north of Okinawa, in the southernmost part of Kagoshima Prefecture. With a subtropical climate, it enjoys some of the highest levels of sunshine in Japan, encouraging the tea plants to develop particularly high levels of bitter compounds.

Benifuuki tea is only lightly steamed (Asamushi), as longer steaming would compromise the delicate methylated catechins. Because the traditional high-quality machinery used here has a relatively large distance from the steam source, the steaming time must be set slightly longer to achieve the desired result

Preparation

Brewing Guide

Allow the tea bag to steep for approximately 2 minutes in 200-300ml (60°C) water. For a full-bodied tea, gently swirl the cup for the last 20 seconds.

Note: The tea bag does not need to be removed after steeping, as the flavour will remain balanced even after a long steeping time. Each tea bag can be used multiple times. Reuse according to personal taste.

Packaging

Filled for us directly by the tea farmer into premium, 100% compostable polylactic acid (PLA) pyramid tea bags, then packed in an airtight, flavour-protecting pouch with a zipper seal and stand-up base.

Recommended Teapot

The tea can be brewed directly in the tea bag in a tea cup and removed after steeping.

Recommended Storage

Ideal is a high quality tea caddy made of cherry bark (Kabazaiku Chazutsu). Alternatively, a more affordable airtight, internally coated tea caddy is also an excellent option.

Test results

We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here.
