Tea farm

The plants are first grown from seed in the company nursery and after a year are released on the alpine pasture at 1800 meters above sea level. The steep slopes of the Vinschgau Sonnenberg have lime and silica rich, nutrient-poor soils and scarce water, which ensures less growth and yield, but favors quality. Steady north winds and the sunny position keep the plants dry. In the short growing season of the alpine summer, the herbs thus form more intense colors and are much richer in valuable ingredients.

Flavour

Edelweiss tea is not only visually similar to white tea. The hairs ( trichomes ) located on the plant give this wonderful herb its incomparable aromatic character. Mildly spicy with subtle woody aromas in the herbaceous finish, Edelweiss whets the appetite. There are exciting vegetal notes of edamame and root vegetables.

EDELWEISS

The edelweiss, which is about 20 centimeters high, shows its typical felty, whitish-silvery bracts, which surround the actual flower in a star shape. The edelweiss (let. Leontopodium nivale) has spread from the steppe regions of the Himalayas to the Alps. Remarkably, the cultivar of edelweiss has changed little or not at all in the process and thus has basically high requirements for its habitat. For the cultivation it needs a minimum altitude of 1000 meters above sea level, only under these demanding climatic conditions and the increased UV radiation the necessary antioxidant concentration in the plants can be achieved. The Edelweiss is under strict nature protection and may not be collected wild since the 19th century. All edelweiss products come from edelweiss crops grown at higher altitudes. According to legend, the edelweiss was born from the tears of a disappointed ice virgin. The unfaithfulness of her lover made her seek her end in a crevasse, her tears fell like stars on the edge of the rock and have been growing on rocky slopes ever since.

Cultivation & Processing

The plants are first grown from seed in the nursery and after a year are released on the mountain pasture at 1800 m altitude. Permeable, lime-rich rather nutrient-poor soils, sun and wind provide optimal conditions for the growth of the plants. The stems and flowers are harvested by hand. This is done in the early morning, so all plant parts are not yet covered by dew. Subsequently, the gentle drying of the tea takes place in specially designed premises directly on site.
