Tea Farm

The tea fields of Nuruki Seicha lie in the shadow of Mount Kaimon (Jap. 開聞岳) in southern Chiran, not far from the Sakurajima volcano. For over 20 years, the Nuruki family has cultivated tea here using organic and holistic farming methods, becoming one of Japan’s most respected organic tea farms. Now in its third generation under Yuichiro Nuruki, the farm’s transition to organic cultivation was far from easy at first. In the late 1990s, tea production in Chiran was still entirely conventional; the family had no precedent to follow and was met with scepticism for their bold decision to grow completely without pesticides. Yet Mr Nuruki’s father remained undeterred, and today the Nuruki Tea Factory proudly produces some of Japan’s most robust, flavoursome, and nutrient-rich organic teas.

Tasting Notes

An exceptionally full-bodied and juicy Fukamushi Sencha with the typical bold character of Chiran, enhanced by the deep steaming process. The pure Yutakamidori cultivar is particularly rich in amino acids (umami) as well as the catechins EGC and EC, making it ideal for preparation as Mizudashi (cold brew). When brewed with cold water, it is refreshing, juicy and subtly fruity.

Sencha

Sencha is by far the most commonly cultivated and consumed green tea in Japan and constitutes the backbone of Japanese tea traditions. The leaves are typically steamed for 10-60 seconds, dried with hot air, churned, and via a multi-staged process rolled into flat needles. The flavour profile of Sencha is very diverse and varies between sweet, fresh and grassy to robustly bitter. The region of cultivation as well as quality of the tea play a significant role in determining flavour.

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, all the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Cultivation & Processing

Special features in location, cultivation and processing

Chiran is considered one of Kagoshima’s premier tea-growing regions in the southernmost part of Japan. The area features flat terrain close to the sea with exceptionally high levels of sunshine. The tea garden has been certified organic since 1998 and utilises self-produced natural fertiliser that is fermented for 3 years and made from a nutritious combination of bamboo powder and mineral-rich stone. The fertile volcanic soil is further complemented by the ashes that are carried by the wind from the nearby active volcano, Mount Sakurajima. After harvesting, the tea is rinsed with water to remove ash residue. The tea farmer takes special pride in the outstanding quality of his traditional rolling and drying machines, which feature bamboo components rather than plastic.

Preparation

Brewing Guide

Mizudashi Cold Brew

Place the tea bag in a pitcher or bottle with 0.5-1L water (optionally with ice cubes). Steep for 1-3 hours in the refrigerator. Gently swirl the tea before pouring to release more flavour.

Hot Infusion

Allow the tea bag to steep for approximately 2 minutes in 200-300ml (60°C) water. For a full-bodied tea, gently swirl the cup for the last 20 seconds. 

Note: The tea bag does not need to be removed after steeping, as the flavour will remain balanced even after a long steeping time. Each tea bag can be used multiple times. Reuse according to personal taste. 

Packaging

Filled for us directly by the tea farmer into premium, 100% compostable polylactic acid (PLA) pyramid tea bags, then packed in an airtight, flavour-protecting pouch with a zipper seal and stand-up base.

Recommended Teapot

Cold Brew: Ideal for cold brewing is a special glass Mizudashi bottle.

Hot Infusion: The tea can be brewed directly in the tea bag in a tea cup and removed after steeping.

Recommended Storage

Ideal is a high quality tea caddy made of cherry bark (Kabazaiku Chazutsu). Alternatively, a more affordable airtight, internally coated tea caddy is also an excellent option.

Test results

We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here.
