Tea Farm

Situated high in the mountains of Lugu, Nantou, the tea farm lies along the ridges of Dong Ding Mountain, famed among Oolong connoisseurs. The area is predominantly inhabited by the indigenous Bunun minority, remote and far removed from any industry. The tea is cultivated here using entirely natural fertilisation methods, in keeping with long-standing tradition. The farm has always refrained from using chemical pesticides and has recently received EU organic certification.

Dong Ding Oolongs are among the world’s most celebrated classic Oolongs. Grown in the exceptional terroir of Lugu, along the ridges of the renowned Dong Ding Mountain, this super-premium tea is medium-fermented and medium-roasted. The deeper roast imparts warming, intensely flavoursome notes of cinnamon and walnut. A pronounced minerality gives the tea a refreshing, thirst-quenching quality, making it equally delightful served iced. With a second infusion, elegant orchid aromas unfold. The liquor becomes beautifully floral, rounded by a soft, delicate hint of cocoa butter.

Oolong

Oolong ("black dragon" in Chinese) is characterised by an oxidation level that falls between green and black tea, making it a semi-oxidised tea. It can be broadly categorised into lightly oxidised (10-29%), medium oxidised (30-60%), and highly oxidised varieties (up to 70%). Many Oolongs acquire an additional distinctive flavour through a delicate roasting process applied after oxidation. This, along with diverse terroirs and various processing intensities, results in an exceptionally diverse range of Oolong teas. Taiwan and the southern region of China, particularly around Fujian province, are widely regarded as the finest terroirs for Oolong.

Cultivation & Processing

For fine Dong Ding Oolongs, the cultivars Qin Xin or Four Seasons are typically used. This tea is harvested by hand, selecting the bud and the first three leaves, as is standard for high-quality Oolong. Unlike green tea, the leaves for Oolong are allowed to mature slightly longer on the bush, developing greater depth and structure. 

After harvesting, the leaves are withered in the sun, gently reducing moisture and initiating light oxidation. They are then brought indoors for further withering and are carefully tossed several times. This delicate movement causes slight bruising along the leaf edges, allowing cell sap to react with oxygen and deepen the oxidation process. 

During the next stage, oxidation intensifies. The leaves rest (depending on the batch size) on bamboo trays or large mesh racks in a controlled fermentation room, where the bruised edges gradually develop their characteristic reddish-brown hue. Once the desired level of oxidation is reached, the process is halted by applying heat in a step known as "kill-green". The leaves are then rolled to break down their structure, allowing the aromatic juices to coat the surface and set. Through repeated rolling, the tea acquires its distinctive tightly curled, ball-shaped form. 

Finally, the leaves are carefully dried in the oven. In a concluding step, our Dong Ding Oolong undergoes a traditional roasting process, refining its depth, warmth and complexity.

Brewing Guide

2 heaped tsp per 200-300ml (80°C) water. Steep for 2-3 minutes.

The tea farmer's recommendation:  85°C, 3-4 min

Recommended Teapot

Oolong tea is traditionally brewed in a Gaiwan (in small quantities) or a tall glass teapot with an integrated sieve so that the leaves are able to freely drift around inside the pot. For an especially aromatic infusion, we recommend a Yixing teapot made from light-coloured clay.

Recommended Storage

Ideally store in a quality tea caddy made from cherry tree bark (wooden, Kabazaiku Chazutsu) or an airtight, double-coated metal tin.
