Tea Farm

The award-winning tea farm is located in picturesque Pinglin in a small town with a population of 6000 by the Da She lake. A designated water conservation area, Pinglin is particularly well known for its Oolong teas, and the hilly landscape is almost exclusively used for growing tea. This tea farm is one of the few in the region that cultivates tea without artificial pesticides or fertilisers, which coupled with gentle, skilful processing, preserves the pure natural fragrance of the leaves.

This rich and sensual tea opens with sweet, fruity notes of apricot with a touch of astringency and nuttiness. The bouquet then develops into a deep molasses accompanied by a warm, wooden barrel aroma for a very round and relaxing brew.

Oolong

Oolong (lit. “black snake”) is a partially oxidised Chinese tea that comes in an enormous range of styles and flavours depending on the terroir and how it is processed. The oxidation levels of Oolong vary from light (10–29%) to medium (30–60%) and heavy (up to 70%), which puts it somewhere between a green tea (lightly oxidised) and black tea (fully oxidised). On top of this, Oolong can then be roasted for added depth. The finest Oolongs are generally considered to be produced in Taiwan and the southern part of China around Fujian province.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements.

Cultivation & Processing

All teas contain modest amounts of GABA (gamma-aminobutyric acid) however GABA teas can contain up to fifty times more of the inhibitory neurotransmitter than in conventional teas. This is achieved via a special vacuum-fermentation process where the harvested leaves are put into tanks that are pumped with nitrogen to create the anaerobic conditions needed to enhance the process of converting glutamic acid in the leaves to GABA, while also creating the distinct GABA tea flavour.

Preparation

Brewing

Steep 2 heaped tsp in 150-200ml at 85°C for 60-90 seconds. Suitable for multiple infusions.

For a very mild, relaxing infusion with lots of GABA and little caffeine, steep for 30 seconds only.

Packaging & Storage

Packed in a high-quality, airtight, resealable standing zipper pouch with nine protective layers to preserve flavour and prevent oxidation. After opening, press out as much air as possible when snapping shut. Alternatively place tea leaves in a stylish tea caddy.

Recommended Teapot

Oolong tea is traditionally brewed in small quantities in a Gaiwan, Yixing or porcelain teapot. Alternatively we can recommend a glass teapot with ample room for the leaves to unfurl as they steep.
