Tasting Notes

For this rare green tea, only carefully selected stems (kuki) from the October harvest are used. In keeping with tradition, they are specially stored and matured for a full three years before being oven-roasted in exceptionally small batches of just a few kilograms. The result is a beautifully sweet and elegant Sannenbancha with refined roasted notes and an expressive, full-bodied character.

Organic Kuki Sannenbancha

SANNENBANCHA

Sannenbancha (三年番茶) is a distinctive form of Bancha and a particularly rare type of Japanese green tea. The name ‘sannen’ translates as ‘three years’, referring to the tea’s characteristic ageing or maturation period of approximately three years. Sannenbancha typically contains a high proportion of stems, although the exact composition varies considerably – from as little as around 5% to teas made exclusively (100%) from stems. The intensity of roasting can also vary significantly. Its production process is therefore considerably longer and, in this respect, more elaborate than that of most other Japanese green teas. The result is a dark brown infusion with an earthy, full-bodied taste.

All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, all the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Cultivation & Processing

Despite high demand, our tea farmer exclusively uses the lower stems from the October harvest and allows them to mature for a full three years (sannen). This makes it an authentic Sannenbancha, matured (jukusei 熟成) for the full traditional three-year period. Even in Japan, this type of green tea is produced only in small quantities and has become a highly sought-after rarity. Pure kuki Sannenbancha, made entirely from stems, is even rarer.

Of the few producers of Sannenbancha remaining in Japan, many shorten the maturation period or blend in material from earlier harvests in order to increase production. However, this can compromise both the flavour and the tea’s characteristic qualities.

By using only stems that have been matured for three full years and roasting them in exceptionally small batches, our farmer achieves a particularly even roast and allows the tea to develop its flavour to its fullest potential. This careful process also ensures consistent macrobiotic qualities.

Origin

This tea is predominantly sourced from the above-mentioned tea farm in Fujieda, Shizuoka; small amounts of tea from other local tea farms in Shizuoka are blended in to increase the yield. Sourced directly from the tea farmer.

Preparation

Brewing Guide

For the best flavour (balanced, yang)

1 heaped tbsp per 200-300ml (60°C) water. Steep for 2 minutes. Suitable for several infusions.

As a cold brew / Mizudashi (sweeter and refreshing, lower yang)

3 heaped tbsp per 1L room temperature or chilled water. Steep for 60 minutes in a Mizudashi pitcher or flask.

For a stronger tea (robust and bitter, maximum yang)

3 heaped tbsp per 1L water, briefly boiled. Allow to simmer for 5-45 minutes on very low heat. Strain.

Packaging

High quality, airtight, resealable standing zipper pouch with 9 protective layers to preserve flavour and protect against oxidation and contamination. The tea is vacuum packaged according to the highest standards in Japan, with a small quantity of nitrogen added to the package to protect against oxidation.

Recommended Teapot

The ideal teapot for Sannenbancha is a Dobin made with brown clay or a black Tokoname Kyusu, which is a good all-rounder for preparing green teas. Alternatively, a glass teapot with a large strainer can be used. When preparing a cold brew, it is recommended to use a specially designed pitcher for Mizudashi.

Recommended Storage

Ideally store green tea in a quality tea caddy made from cherry tree bark (wooden, Kabazaiku Chazutsu) or an airtight, double-coated metal tin.
