We source this high grade tea from one of Japan's leading organic tea farms, located in picturesque Makizono.

Smooth and creamy like lemon mousse, this Yuzu Gyokuro Karigane offers an exciting and elegant take on this high grade stem tea. Since the stems are rich in amino acids – particularly L-theanine – this results in an especially sweet and relaxing brew.

Yuzu

Yuzu (柚子) is a citrus fruit of East Asian origin with complex aromas of acidic lemon, bitter grapefruit and sweet tangerine. The fruit is particularly popular in Japan and Korea as a natural flavouring in food and drinks. Since the 18th century, yuzu essential oil has also traditionally been added to baths in Japan to celebrate the Winter solstice (Toji).

Gyokuro

Gyokuro is considered the highest grade of all Japanese green teas. In an elaborate process, Gyokuro tea plants are shaded for up to 30 days before harvesting, blocking up to 90% of sunlight, which stimulates the formation of amino acids while preserving as many nutrients as possible. This, as well as the finest first harvest leaf material used to make this most precious of teas, gives Gyokuro its characteristic sweetness and strong umami.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Additionally, radioactivity levels are regularly monitored in all the regions of Japan from which we source our teas.

Cultivation & Processing

The tea field is located in the top terroir of Makizono in a protected valley approximately 180-250m above sea level in the mountains of idyllic Kirishima in Kagoshima, the southernmost prefecture of Japan. The combination of the mild, subtropical Kagoshima climate and the colder mountainous terrain of Makizono provide the perfect bracing climate for the cultivation of this refined green tea. The dark koruboku / Andosol (volcanic) soil is nutritious and rich in humus with a large proportion of mineral volcanic ash. The tea field has been certified organic since 1994.

Preparation

Brewing

Steep 2 heaped tsp in 100–300ml water at 55–60°C for 2 min. Suitable for several infusions.

For a more intense yuzu flavour, we recommend brewing with 70–75°C water for 2–3 min.

Packaging & Storage

Packed in a high-quality, airtight, resealable standing zipper pouch with 9 protective layers to preserve flavour and prevent oxidation. After opening, press out as much air as possible when snapping shut. Alternatively place tea leaves in a stylish Chazutsu tea caddy with double lid to keep them fresher for even longer.

Recommended Teapot

A traditional Japanese Kyusu teapot made from iron-rich Tokoname or Banko clay is perfect for green teas as they help to soften any astringency for a sweeter, mellower brew. Alternatively use a glass teapot with ample room for the leaves to unfurl as they steep.
