Tea Farm

The tea garden is located in the misty Baoshan Mountains at over 2,000 metres above sea level, in western Yunnan near the border with Myanmar. Established in 1984, the farm cultivates its teas entirely without chemical pesticides. The combination of the slightly acidic soil, the foggy climate, and the use of leaves from Yunnan Daye tea trees results in exceptionally expressive, highly aromatic teas.

Tasting Notes

This beautifully aged Yunnan Bai Mu Dan delights the palate with a mélange of herbal-woodland notes and delicate, dessert-like aromas of custard and freshly baked cake. The fragrance, with almost mystical hints of liquorice, speaks to the unique terroir deep in Yunnan’s tea mountains at over 2,000 metres above sea level. As the tea cools slightly, brighter, fruitier notes of candied peach emerge, turning each cup into a truly multidimensional pleasure.

Aged White Tea

White tea is generally made from specific cultivars and is the least processed tea (Camellia sinensis), with the lowest level of oxidation. Due to its minimal yet highly demanding production process, which involves pre-drying and air withering, it retains a high concentration of natural tea compounds. High-quality white teas are characterised by a high proportion of aromatic leaf buds and a light infusion colour. In terms of flavour, white tea stands out for its refined elegance and delicate sweetness, often featuring notes of vanilla and a smooth, velvety mouthfeel.

With ageing, the fresh aromas of white tea become more integrated, giving aged white tea a notably soft, rounded character: sweet, fruity notes move to the foreground, while vegetal nuances become less pronounced in the cup.

Cultivation & Processing

Special features in location, cultivation and processing

At an altitude of over 2,000 metres, the tea farm benefits not only from an ideal stimulating mountain climate for tea cultivation (with day-to-night temperature differences of up to 10–20°C) but also from consistently mist-rich conditions. This natural veil of fog protects the tea leaves from direct sunlight and contributes to an especially sweet, aromatic infusion. It is also the origin of this tea’s epithet “Bai Lu” – literally “white dew”.

As part of the historical region of origin of the tea plant, the area is home to many majestic old tea trees, from which the highly sought-after Pu Erh teas are traditionally produced. The use of the local Yunnan Daye cultivar (“Yunnan Large Leaf”) gives this tea a particularly aromatic, unique and at the same time distinctly refined character.

This comes 100% from the tea farm in Baoshan, Yunnan, sourced directly from the tea farmer.

Preparation

Brewing Guide

Add 3 heaped teaspoons to 100-300ml water (90-95°C) and steep for 30-40 sec. Suitable for several infusions. The tea can also be boiled, as is traditional in China (煮茶 Zhu Cha). Simply use the same amount of tea and water and boil for 1-2 minutes (depending on preference).

Recommended Teapot

For an especially aromatic infusion, we recommend a Yixing teapot made from clay or a black Tokoname Kyusu with a fine ceramic strainer. Alternatively, a glass teapot with an integrated strainer can be used for a more neutral taste.

Recommended Tea Caddy

Ideal is a traditional Chinese tea caddy made of porcelain or Nixing clay. An alternative, more affordable option is an airtight tea caddy.

Test results

We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here.
