Fundamental to the philosophy of Mr Toshihiro Hirayanagi and the Yamahira Tea Garden is an innovative and holistic understanding of tea cultivation, and of tea itself as "a balm for the soul". Accordingly, since 2003 he has worked without pesticides or chemical fertilisers, and as Chairman of the Fuji City Temomi Preservation Society, he is one of the most renowned masters of the traditional art of hand-rolling tea in all of Japan (temomi).

This premium GABA tea impresses not only with a high GABA content of 330mg, but also delights on the palate with rich, buttery notes and aromatic hints reminiscent of crème brûlée. A true all-rounder among GABA teas, it is also distinguished by a particularly balancing, mineral and alkalising character. These qualities reflect Mr Hirayanagi’s traditional, holistic production methods, carried out to the highest organic standards.

GABA tea is a functional tea developed in Japan, crafted using a specialised process that promotes high levels of the amino acid GABA. This compound is the primary inhibitory neurotransmitter in the central nervous system and plays a role in a number of important physiological processes. In addition, GABA tea contains all other key components of regular green tea, namely catechins, in comparable amounts. Among connoisseurs, GABA teas are prized for their buttery, smooth flavour.

Through a careful selection of leaves and a specialised processing method, the tea farmer ensures a high GABA content is achieved.

GABA: An Important Amino Acid

The amino acid GABA (γ-aminobutyric acid) is an important non-proteinogenic amino acid produced by the body.

GABA occurs in varying amounts in certain foods and is also synthesised in the brain from glutamine. Particularly high levels are found in special types of green tea (GABA tea, up to 400 mg/100g), tomatoes (up to around 60mg), germinated rice, certain fermented foods, potatoes (16–60mg), and citrus fruits (10–23mg).

Special features in location, cultivation & processing

The tea farm is located in a valley on Mount Ashitaka, southwest of the famous Mount Fuji. Owing to its sheltered position, the area enjoys an ideal microclimate with frequent mist and optimal soil irrigation from the Sudo River, which runs through the valley. This optimal environment, combined with innovative cultivation methods, has enabled the farmer to forgo chemical fertilisers and pesticides since 2003. Instead, he uses high-quality organic fertilisers such as reed and buckwheat husks, with the aim of creating an optimal foundation for healthy, nutrient-rich plants through exceptionally high soil quality.

This tea comes exclusively from the above-mentioned tea fields in the Sudo River Valley, sourced directly from the tea farmer.

Preparation

Brewing Guide

2 rounded teaspoons per 200-300ml water, 70°C.

Mild, relaxing brew: infuse for 30 seconds
Strong, invigorating brew: infuse for 3 minutes

Packaging

Packaged directly by the tea farmer for us in airtight, flavour-sealed bags with a zipper and a stand-up base.

Recommended Teapot

Ideal for GABA tea is a Banko Kyusu made from purple clay with a fine ceramic strainer. This enhances the umami and makes the tea noticeably less bitter. Alternatively, a black Tokoname Kyusu can be used, which has a more neutral effect on flavour (an all-rounder for all types of green tea).

Recommended Tea Caddy

We recommend a tea caddy made from high-quality cherry bark (Kabazaiku Chazutsu). As a more affordable alternative, an airtight tea caddy with an inner coating is also an excellent option.

Test results

We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here.
