Tasting Notes

For this rare tea, only stems from the 1st and 2nd harvests are used. Due to the limited quantities available, they must be carefully collected from various tea farms in the high mountain areas of Tenryu, one of Japan’s top growing regions. Despite a medium to strong roast, the use of stems results in an exceptionally mild and light Hojicha that still offers rich roasted notes. Bo Hojicha is wonderfully smooth and drinkable, with a lovely freshness and gentle astringency on the finish. In the cup, it reveals a beautifully bright honey-golden hue.

Hojicha's fine needles are gently roasted in special Hojicha roasters after being processed into Sencha or Bancha, whereby they develop malty sweet aromas and even caramel notes. Unlike most other Hojicha teas on the market, we use only absolute top-quality stems primarily from 1st harvests, a difference that enhances both taste and nutritional content. Due to its mild flavour profile, Hojicha is also extremely popular in Japan, particularly during the winter holidays and after sumptuous meals and feasts.

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, all the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Special features in location, cultivation and processing

This rare tea is produced exclusively for us. One of our esteemed tea masters in Shizuoka selects stems from premium high-mountain gardens in Tenryu and roasts each batch individually. All stems are sourced from pesticide-free cultivation, and only a few kilograms of this tea are crafted each year.

Preparation

Preparation

2 heaped teaspoons per 200–300 ml water, 60–80°C water, steep for 1–2 minutes.

For preparation as a cold brew, we recommend using 10–20g of tea per litre of cold water and letting it steep in the fridge for 2 to 4 hours.

Packaging & Storage

Packed directly on-site for us in high quality, airtight, resealable standing zipper pouches with 9 protective layers to preserve flavour and protect against oxidation and contamination. When sealing the pouch, press out as much air as possible. Alternatively, and especially for longer-term storage, we recommend our airtight tea caddies.

Recommended Teapot

Ideal for this tea is a black Tokoname Kyusu (an all-rounder for all types of green tea), or a glass teapot with a large strainer. For cold brew preparation (Mizudashi), we recommend a Mizudashi Cold Brew Flask.
