Tea Farm

With a history dating back to Japan’s late medieval period, this family-owned tea farm is a true gem among Shizuoka’s organic farms, tending to more than 200 acres of tea fields nestled on secluded hillsides in the heart of Honyama, and over 20 cultivated tea varieties. Now run by a fourth-generation tea farmer together with her father, the farm made the transition to pesticide-free cultivation as early as the 1980s. The turning point came when the rivers in the valley began to lose their natural purity, gradually taking on a foul odour as a result of pesticide use in the surrounding fields. Deeply connected to the mountain’s nature and the people of the valley, he could no longer reconcile the use of chemicals with his vision of tea as a drink that should nurture both body and mind. In addition to outstanding Sencha made from a variety of cultivars – including rare varieties developed by the farmer himself and grown exclusively here – the farm also produces exceptionally aromatic Wakocha (Japanese black tea) and Gyokuro with a remarkable umami depth, beautifully embodying the region’s unique terroir.

An incomparably pure tea that captures the special nuances of true mountain-grown tea from Shizouka, a terroir famous for its Sencha. Delicate and light, this hand-picked Sencha gently rests on the palate and reveals – unusual for the typically full-bodied Saemidori cultivar – a remarkable clarity accompanied by a slight, unobtrusive astringency. Despite its lightness, it unmistakably conveys the strength of authentic mountain teas, its subtle energy resonating deeply through the body. Fresh in aroma and carried by an intense, almost perfume-like leaf sweetness, this Sencha seems to distill the very fragrance and spirit of the mountains. With the second infusion, the tea unfolds greater depth: distinct grassy notes and the freshness of a mist-shrouded mountain climate emerge, enhancing the invigorating, clear character of this extraordinary tea.

Sencha

Sencha is by far the most widely grown green tea in Japan and forms the backbone of the Japanese tea tradition. The leaves are traditionally steamed for 10 - 60 seconds after harvesting, dried with hot air, shaken and then rolled into small flat needles. The flavour profile of Sencha is versatile, ranging from sweet, fresh, grassy notes on the one hand, to strong, tart, noble, bitter notes on the other, depending on the region of cultivation.

All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, all the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

"Tenka-ichi no Ocha" – “The Best Tea Under Heaven”
Standing amidst the tea fields of this remarkable farm, located deep in the mountains of Honyama, one begins to truly sense why Shizuoka has long been celebrated as Japan’s finest terroir for tea cultivation. Like a manifestation of Japan’s kami nature spirits, these mountains are imbued with cool mists, crystal-clear spring water, graceful mountain cherry blossoms, and ancient forests that have stood watch over the slopes for centuries. The tea fields lie serenely along the mountain ridges at an elevation of 260 to 330 metres above sea level, offering a breathtaking view over Honyama. Their sloping position ensures excellent drainage, allowing the tea bushes to receive precisely the right amount of water – a crucial factor in cultivating top-quality tea. After many years of experimenting with different cultivars and growing conditions, the most suitable varieties were carefully matched to each plot. In this way, the distinctive character of every cultivar harmoniously merges with the unique terroir of Honyama, ensuring a tea of unparalleled depth and quality.

Preparation

Brewing Guide

2-3 heaped teaspoons (approximately 7-9 g) per 150-200ml, 60-65°C, steep for 2 minutes.

We recommend up to five infusions. For subsequent brews, reduce the steeping time to 15–20 seconds each, while the water temperature may be raised to around 75 °C, depending on your taste.

Packaging

Directly packaged for us on-site in a high-quality, airtight, resealable zipper pouch with nine protective layers to preserve flavour and prevent oxidation. When closing the bag, press out as much air as possible to keep the tea well preserved. Alternatively, and especially for longer-term storage, we recommend our stylish and airtight tea caddies.

Recommended Teapot

Both the Tokoname Kyusu and the Banko Kyusu are excellent choices for brewing this tea. A black Tokoname Kyusu develops the flavour in a relatively neutral way, while a red Tokoname Kyusu tends to highlight the fine, refreshingly bitter notes of the Sencha. By contrast, a Banko Kyusu, made from the characteristically iron-rich, deep violet Banko clay, gives the tea a rounder, fuller profile, bringing its umami and sweetness more prominently to the fore.
