Character

Tasting Notes

This Sencha greets the senses with fresh aromas of damp spring grass and a subtle fruity note that falls somewhere between mango and lemon zest. A gentle, unobtrusive bitterness blends harmoniously with the warm umami, together forming the framework that carries the entire aromatic composition. Upon sipping, a delicate, sweet creaminess emerges, reminiscent of caramelised sugar, leaving a fine lingering finish on the palate. Underneath it all lies an herbal-flavoursome tone which, in combination with the initial fruity-fresh accents, evokes hints of lemon verbena. Overall, this Sencha presents itself as wonderfully balanced but above all fresh and light. A tea for any season.

SENCHA

Sencha is by far the most commonly cultivated and consumed green tea in Japan and constitutes the backbone of Japanese tea traditions. The leaves are typically steamed for 10–60 seconds, dried with hot air, agitated, and via a multi-staged process rolled into flat needles. The flavour profile of Sencha is very diverse and varies between sweet, fresh and grassy to robustly bitter. The region of cultivation as well as quality of the tea play a significant role in determining flavour.

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, all the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Special features in location, cultivation & processing

The tea farm lies in a remote mountainous area between Kagoshima Bay and the open Pacific Ocean. Its proximity to the sea gives the air a distinctly mineral and maritime quality, which is reflected in the subtly flavoursome quality of teas from this region.

This tea comes 100% from the above-mentioned tea field in Hioki, sourced directly from the tea farmer.

Preparation

Brewing Guide

2–3 rounded teaspoons (approx. 6–8 g) per 150–200 ml water, 55–60 °C, steep for 2 minutes.

We recommend preparing up to five infusions. For subsequent infusions, the steeping time should be reduced to 15–20 seconds each, while the temperature may be increased to around 75 °C according to taste."

Packaging & Storage

Directly packaged for us on-site in a high-quality, airtight, resealable zipper pouch with nine protective layers to preserve flavour and prevent oxidation. When closing the bag, press out as much air as possible to keep the tea well preserved. Alternatively, and especially for longer-term storage, we recommend our stylish and airtight tea caddies.

Recommended Teapot

Ideal is a violet Banko Kyusu with an integrated ceramic strainer, which beautifully highlights the tea’s delicate amino acids. Alternatively, a black or red Tokoname Kyusu makes for a versatile all-rounder, perfectly suited for all varieties of Japanese green tea.
