Tea Farm

The fields of Nuruki Seicha lie in the shadow of Mount Kaimon (Japanese: 開聞岳), in southern Chiran and not far from the Sakurajima volcano. For over 20 years, the Nuruki family has been cultivating tea here using organic and holistic farming methods, and has become one of the most highly regarded organic farms in Japan. Now in its third generation, the farm is led by Yuichiro Nuruki. The transition to organic farming was initially a major challenge: In the late 1990s, Chiran was still entirely dominated by conventional agriculture. The family had no prior experience to draw upon, and their bold decision to forgo pesticides altogether was met with scepticism. However, Mr Nuruki’s father remained undeterred, and today the Nuruki Tea Factory proudly produces teas of top quality, rich in flavour and nutrients.

Sencha

Sencha is by far the most widely grown green tea in Japan and forms the backbone of the Japanese tea tradition. The leaves are traditionally steamed for 10 - 60 seconds after harvesting, dried with hot air, shaken and then rolled into small flat needles. The flavour profile of Sencha is versatile, ranging from sweet, fresh, grassy notes on the one hand, to strong, tart, noble, bitter notes on the other, depending on the region of cultivation.

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Cultivation & Processing

Special features in location, cultivation & processing

The renowned tea-growing region of Chiran lies in Kagoshima, at the southern tip of Japan. Its flat terrain, proximity to the sea and abundant sunshine create exceptional conditions for tea cultivation. These tea fields have been certified organic since 1998. The plants are nourished with a natural, homemade fertiliser that is fermented and matured for three years. A rich blend of natural ingredients, including bamboo powder and mineral-rich rock, complements the fertile volcanic soil, which is enriched by fine ash from the active Mount Sakurajima. To protect the leaves from the intense southern sun, the tea plants are shaded for around seven days before harvest. After picking, the leaves are carefully washed with water to remove volcanic ash. The tea farmer also takes particular pride in his traditional rolling and drying machines. Their high-quality construction uses bamboo components in place of plastic, reflecting the same considered approach found throughout the entire production of the tea.

Preparation

Brewing Guide

2 heaped tsp per 100-300ml (60°C) water. Steep for 2 minutes.

Suitable for up to 4 infusions.

1st infusion: 60°C, 45 seconds 3rd: 60°C, 25 seconds
2nd: 65°C, 30 seconds 4th: 65°C, 20 seconds

Packaging & Storage

Packaged in a high-quality, airtight, resealable standing zipper pouch with nine protective layers to preserve flavour and protect against oxidation and contamination. When closing the pouch, press out as much air as possible before zipping shut.

Alternatively, and especially for longer-term storage, we recommend storing in an airtight tea caddy.

Recommended Teapot

For Fukamushi Sencha, we recommend using a Fukamushi Tokoname Kyusu with a specially designed, stainless steel mesh strainer. Due to the deep-steaming process, Fukamushi tea leaves are considerably finer than those of regular Sencha. Conventional filters can clog easily, preventing the tea from pouring properly, while the specialised filter design allows the infusion to be poured quickly and evenly.

Test results

We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here.
