Packed with personality, this aged Moonlight White comes from a leading organic farm in Pu Erh, Yunnan, and was exclusively pressed for us into a 200g cake in 2021. Grown at an altitude of 1500m, this hand-picked white tea is specially withered to make it a little more oxidised, resulting in a slightly bitter profile that makes it excellent for further ageing.

Tea Farm

The tea farm is located in an area above the city of Pu Erh, where a community of Dai people live. Since 2011 the farm has received all major international organic certificates, and has been cultivating tea without pesticides since its founding in 1998.

Character

Taste

The famous Yunnan Moonlight teas are often compared to Pu Erhs since they also come from Pu Erh and have a higher degree of oxidation, thanks to a special withering process. On top of this they have a distinct vanilla aroma with pleasant notes of tobacco and a hint of peach. In terms of taste, they are extremely full-bodied with a clear edge and pleasant astringency in the finish, especially in later infusions. For this reason it is well-suited for further aging, but also incredibly enjoyable in the present, especially for lovers of white tea with plenty of personality.

White Tea

White tea is typically made from specific cultivars of Camellia sinensis and is the least processed type of tea, with the lowest degree of oxidation. Due to the minimal yet lengthy production process of pre-drying and withering in the open air, it has a very high content of natural tea compounds. Markers of quality in high-grade white tea include a high proportion of aromatic leaf buds and a lightly coloured cup. Elegant and delicate, white teas tend to be subtly sweet with nuances of vanilla and a velvety texture.

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements.

Cultivation & Processing

The highlands of Yunnan have a mild, subtropical climate even at great heights, thanks to the mostly south-facing slopes, where the climatic conditions are strongly influenced by the Indian and Pacific Oceans.

This tea is grown in the Wuliang Mountains at an altitude of 1500m above the city of Pu Erh, far from any industry or major roads. In fact, the Ancient Tea Horse Road to Tibet runs right through the fields.

Only a few kilos of this tea is produced per year as only the very best young buds and two leaves are selected, which are first pre-wilted indoors using a secret technique, then sun-dried in the traditional way.

Preparation

Brewing

Break off 5g (about 2 tsp) of the tea cake to steep in 250–300ml of water at 85–90°C for 2–3 minutes.

To prepare traditionally in a small teapot or Gaiwan, we recommend steeping 7g in 100–200ml water at 90–95°C for one minute.

Suitable for several infusions, increase the steep time with each subsequent brew.

Packaging & Storage

Traditionally wrapped in fine, breathable rice paper. Store in original packaging, or break into pieces and place in a tea caddy in a cool, dry place away from strong odours.

Recommended Teapot

We recommend brewing this tea in a tall glass teapot with ample room for the leaves to unfurl as they steep. For a more traditional brewing style, use a small ceramic teapot or Gaiwan.
