Tea Farm

With a family legacy dating back to Japan’s late medieval period, our tea farm is a true gem among Shizuoka’s organic estates. Nestled on secluded hillsides surrounding a mountain in the heart of Honyama, the farm contains over 200 tea fields and grows over 20 different cultivars, all entirely family-owned. The tea farm is run by the 4th generation farmer together with her father, who transitioned to pesticide-free cultivation back in the 1980s. The reason was personal as well as ecological: The once-pure rivers in the valley began to lose their clarity and developed a foul odour as a direct result of pesticide use in the surrounding fields. With a deep connection to the nature of the mountain and to the people in the valley, the farmer saw no reconciliation between pesticide use and his vision of tea as a drink meant to nourish the body and mind. In addition to producing exceptional Sencha from a wide range of cultivars, including rare, farm-exclusive varieties developed by the farmer himself, the estate is also celebrated for its remarkably aromatic Wakocha (Japanese black tea) and Gyokuro, beautifully reflecting the special terroir, harmonised by a wonderful umami.

Tasting Notes

From the moment the bag is opened, delicate aromas unfurl, evoking freshly cut mountain meadow flowers accompanied by a refreshing hint of peppermint – already offering a foretaste of the almost spiritually uplifting tea experience to follow. Deep green notes of wild herbs, interwoven with a subtly fruity hint of peach in the aroma of the wet leaves, reinforce this impression and make it nearly impossible to resist the first sip. And indeed, what follows is a gustatory revelation that only the very finest top-grade Sencha can offer. The tea harmonises the purity and freshness of mountain spring water with a delightful grassy sweetness and fine nuances of meadow herbs. The result is a sense that the tea has captured the scents and the warm spring breeze of the mountains within its needles, allowing one to experience the atmosphere of its harvest day, the 1st of May, in a uniquely gustatory way. All in all, this is an outstanding Sencha that will transport especially lovers of classic Shizuoka Sencha straight to tea heaven.

Shincha, which translates from Japanese as "new tea", marks the start of the tea season in Japan and is eagerly awaited every year. For the Japanese tea world, it is considered the highest quality tea of the season and embodies the perfect freshness of Japanese green tea, exemplifying a wide range of flavours. Only the tea buds and young leaves, the first shoots of spring, are harvested. Their richness in valuable nutrients contributes to the unmistakable freshness and strength that makes Shincha so special. "Tenka-ichi no Ocha" – "The Best Tea Under Heaven"
Amidst the tea fields of our remarkable farm, located deep in the mountains of Honyama, it becomes viscerally understandable why Shizuoka has long been praised as Japan’s finest terroir for tea cultivation. Like a manifestation of Japan's Kami nature deities, the mountains are characterised by cool wafts of mist, crystal-clear spring waters, graceful cherry blossoms, and deep forests that have always watched over these mountains. The tea fields are idyllically situated on slopes at altitudes between 260 and 330 metres above sea level, offering breathtaking views over Honyama. The sloped terrain provides excellent drainage, ensuring the tea plants receive just the right amount of water, a crucial factor in producing top-quality teas. After many years of experimentation with different cultivars and growing locations, the most suitable cultivars have been carefully selected for each plot. As a result, every tea from this farm perfectly unites the distinct character of its cultivar with the unique terroir of Honyama, guaranteeing an inimitable tea experience.

Preparation

2-3 rounded tsp. (7-9g) per 150-200ml water, 60-65°C, steep for 2 minutes.

We recommend preparing up to five infusions. For subsequent infusions, the steeping time should be reduced to 15–20 seconds for each infusion, while the temperature can be increased to around 75°C, depending on personal taste.

Packaging & Storage

Packed directly on-site for us in airtight flavour-protection pouches with zipper and stand-up base. Thanks to a 9-layer coating, the tea is optimally protected from oxidation and environmental contaminants. When closing the pouch, as much air as possible should be pressed out to store the tea securely. Alternatively, and especially for long-term storage, we recommend our stylish and airtight tea caddies.

Recommended Tea Pot

Both the Tokoname Kyusu and the Banko Kyusu are very well suited for this tea. While a black Kyusu made from Tokoname clay beautifully highlights the contrasts and delicate bitterness of the Shincha, a Banko Kyusu made from the particularly iron-rich, dark purple Banko clay rounds out the tea more aromatically and brings the umami and sweetness slightly more to the forefront.

Test results

We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here.
