Tea Farm

Miyazaki Sabō 宮崎茶房

Mr Akira Miyazaki 宮崎亮 is a relatively young, highly acclaimed and award-winning tea farmer who took over the family business in 1991. He became interested in organic farming early on after suffering from a pesticide-induced skin condition. His parents had already begun transitioning the tea farm to fully organic practices in 1983, following the severe illness of a friend caused by a pesticide-related accident. In 2000, he received the prestigious JAS organic certification. Mr Miyazaki’s passion extends beyond the purity of his teas to the creation and blending of natural health teas, such as sannenbancha, blends with ginger, yuzu, and various herbs, as well as Japanese oolong. In total, he produces nearly 200 (!) unique teas tailored to his customers. In the Japanese tea world, he is also known as the "Cultivar King," as he cultivates over 20 different tea varieties across approximately 140 tea fields. Among them are rare cultivars such as Takachiho, Minekaori, and Minamisayaka – varieties almost exclusively grown by Mr Miyazaki – which give his diverse tea specialities their distinctive character.

Character & Aroma

Tasting Notes

We highly recommend placing this tea into a warmed Gaiwan or teapot before brewing in order to fully enjoy the fragrance of the dry leaves. With decades of experience in cultivation, harvesting, processing and blending, Mr Miyazaki masterfully crafts a black tea from stems and leaves that boasts an exceptional aromatic richness: the scent of freshly baked apple pie, buttery chocolate biscuits, and a hint of dried fig invites the senses into an olfactory symphony. Once brewed, rich chocolatey notes take centre stage, interwoven with bright floral undertones. In subsequent infusions, aromatic hints of tropical fruit begin to emerge, paired with a smooth, starchy texture reminiscent of cooked plantains. This Kukicha is a true standout, distinctive in character and sure to captivate anyone with a love for unique black teas.

WAKOCHA

Wakocha (和紅茶) is the name given to black teas from Japan. Despite being an important commodity until the second half of the 20th century, increasing competition from India and China meant that black tea in Japan was relegated to a shadowy existence for a long time, with a return to this heritage only taking place in the last two decades. Despite its distinctive character, Wakocha usually has a mild taste for black tea, with fruity and floral notes and a pleasant honey sweetness, which is why they are often drunk without milk or sugar. In addition to Shizuoka Prefecture, a lot of very high-quality wakocha is produced on the main southern island of Kyushu.

Yoshien Labortests

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Cultivation & Processing

Gokase 五ヶ瀬

The tea fields of Miyazaki Sabo are situated at a relatively high altitude (>500m) in the mountainous northern region of Miyazaki. Although still within the subtropical climate zone (with summer temperatures reaching up to 33°C), the area experiences very low night-time and winter temperatures, sometimes dropping to -10°C. Snowfall is not uncommon in winter, and frost can occur from early October to late April. Since the 1980s, the fields have been organically farmed, using only natural fertilisers such as "Abura-Kasu" (oil cake).

Preparation

3 teaspoons per 200ml water, 90°C, 1-2 minutes. Suitable for multiple infusions. (For subsequent infusions, approx. 30-40 seconds.)

Packaging

High quality, airtight, resealable standing zipper pouch with 9 protective layers to preserve flavour and protect against oxidation and contamination. The tea is vacuum packaged according to the highest standards in Japan, with a small quantity of nitrogen added to the package to protect against oxidation.

Recommended Teapot

Despite its Japanese origin, we recommend using the Chinese Gongfu style for preparing this tea to bring out its particularly aromatic flavour. We recommend using either a Chinese teapot made of Yixing or Nixing clay, or alternatively, a classic Gaiwan made from taste-neutral porcelain. A glass teapot is also a suitable choice.

Recommended Storage

We recommend a high-quality tea caddy made from cherry bark (solid wood, Kabazaiku Chazutsu). As a more affordable alternative, an airtight tea caddy with an inner coating is also an excellent option.

Test results

Test results We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here. Some of our teas are also tested for specific nutritional compounds, in which case the test results are also published here.
