Tea Farm

This tea farm is located in picturesque Miyazaki. Because of their firm commitment to and belief in safe and pure teas, they have successfully transitioned to an organic cultivation method that works in harmony with nature. In the early years, they faced severe insect infestations and disease outbreaks in their tea plants. It took several years and a great deal of creativity to finally discover a way to cultivate healthy, robust plants without harming the environment. This passion is beautifully reflected in the farm's strong and flavourful teas.

Tasting Notes

The clear infusion offers a soft, refreshing and invigorating texture, creating an exceptionally pleasant mouthfeel, almost like fresh morning dew. Despite its delicate nature, the strength and high catechin content of the Okumidori cultivar are unmistakable, revealing themselves through a deep, vegetal richness. Subtle hints of chicory and radish bring a refined, pleasant bitterness, while a touch of refreshing sweetness, reminiscent of a freshly baked pastry, rounds off the flavour beautifully. To fully enjoy both the strength and clarity of this Sencha, we recommend using a moderate amount of leaves and opting for shorter infusion times at first, allowing the tea to reveal its full character.

Sencha

Sencha is by far the most commonly cultivated and consumed green tea in Japan and constitutes the backbone of Japanese tea traditions. The leaves are typically steamed for 10-60 seconds, dried with hot air, churned, and via a multi-staged process rolled into flat needles. The flavour profile of sencha is very diverse and varies between sweet, fresh and grassy to robustly bitter. The region of cultivation as well as quality of the tea play a significant role in determining flavour.

All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

The Miyazaki Prefecture is blessed with abundant natural beauty, featuring lush green mountains and a beautiful coastline. With the second-highest number of sunny days and an average annual temperature of approximately 17.4°C (making it the third warmest region in Japan) Miyazaki provides ideal conditions for productive, high-quality tea cultivation. Beyond its natural features, Miyazaki also holds deep cultural and mythological significance. According to Shintō beliefs, the most revered deity, the sun goddess Amaterasu, is said to have once hidden in the Amano Iwato cave. This event is still honoured today with festivals held in the Shintō shrines of Miyazaki.

Preparation

Brewing Guide

2 heaped teaspoons per 100–300ml water (50–60°C), steep for 2 minutes. Suitable for several infusions.

Packaging & Storage

Packed in an especially high-quality, airtight flavour-protecting pouch with zipper and stand-up base. A 9-layer coating provides maximum protection against contaminants. When closing the pouch, as much air as possible should be pressed out to keep the tea well protected. Alternatively, and particularly for longer-term storage, we recommend our stylish and airtight tea caddies.

Recommended Teapot

For Sencha, a high-quality violet Banko Kyusu is recommended, which enhances the aromas, complexity, and umami of the tea. To emphasise the freshness and grassiness of Sencha, however, preparation in a classic black Tokoname Kyusu is recommended.

Test results

We find it very important that our teas are pure and produced in a way that respects the environment. For this reason, each one of our teas is tested for pesticide residues by an independent laboratory, the results of which can be found here.
