This low-caffeine, highly alkaline green tea speciality is made from leaves and stems, offering a gentle sweetness derived from unique polysaccharides. Over a period of three years (san nen; 三年), the material is either carefully matured (jukusei) or left to grow (koba), before undergoing a nuanced roasting process.
