The alpine climate offers ideal conditions for growing hearty, flavourful herbs and flowers. Located 1,000m above sea level, the plants grow slowly and build a high concentration of nutrients. The farm's location on the south-facing mountainside means a greater number of days with intense sunlight per year and large temperature differences between night and day.
The herbs grow amid the highly diverse flora of the mountainous landscape and benefit from a plethora of fresh water sources. Located in one of the most forested counties in Switzerland, the farm utilises the idyllic landscape while also preserving nature, farming according to organic standards since 1982. As a result, the herbs are robust and resilient, developing an especially aromatic character.
Despite long and cold winters, the warm spring sun brings forth vibrant meadows full of diverse alpine herbs. The peak bloom of the fields is heavily weather dependent and may occur in May or June. Weeds are carefully removed by hand before the harvest, and the harvest itself is carried out with the help of machinery. After harvest, the leaves and flowers are gently dried in-house at temperatures no higher than 40°C. The stalks are then removed, and the leaves and flowers are roughly cut before being packaged.
