Tea Farm

The family tea farm is led by a 3rd-generation farmer with over 10 years' experience in cultivating wakocha and GABA teas. His trust in the power of nature lies at the heart of his decision to completely do without herbicides or pesticides. Instead, he relies only on natural, organic fertiliser. Passionate about GABA tea, in particular, our farmer even organised a crowdfunding campaign to shine a light on the thus far relatively unknown tea in order to give new impetus to the Japanese green tea industry. It was only a few years ago that he successfully brought it to market with the help of an initiative from the Japanese Ministry of Agriculture.

Due to the production method, GABA tea has somewhat broken, dry, dark green leaves with a small number of stems.

GABA tea is a functional tea developed in Japan which has high levels of the amino acid GABA due to its special processing. GABA is the most important inhibitory neurotransmitter in the central nervous system and is involved in significant processes in the body, especially in the reduction of nerve irritation, stress management, mood, growth hormones (muscle formation), fat loss and the regulation of blood pressure. In addition, GABA tea also contains all of the other important ingredients of regular green tea, such as catechins, in similar amounts. GABA teas are appreciated by connoisseurs for their buttery, smooth taste.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements.

GABA Content

The tea farmer ensures that a high amount of GABA is reached through carefully selecting the leaves, as well as through the unique production process.

GABA, an Important Amino Acid

The natural amino acid GABA (γ-aminobutyric acid) is the most important chemical messenger in the central nervous system, acting as an inhibitory neurotransmitter.

GABA is found in varying amounts in certain foods and is also formed in the brain from glutamine. GABA green teas (up to 400mg/100g), tomatoes (up to about 60mg), sprouted rice, certain fermented foods, potatoes (16–60mg) and citrus fruits (10–23mg) contain particularly high amounts of this amino acid.

Cultivation & Processing

The top growing region of Chiran, located in Kagoshima in the southernmost part of Japan, is known for its strong and natural senchas. The intense sunlight benefits the synthesis of valuable catechins in the tea plants, which are nourished by the fertile volcanic soil as well as ash from the nearby active Mt. Sakurajima volcano.


Brewing Guide

2 heaped tsp per 200–300ml water (70°C).

For a mild, relaxing tea: steep for 30 seconds
For a strong, stimulating tea: steep for 3 minutes

Recommended Teapot

The ideal teapot for GABA tea is a banko kyusu made from violet clay, with a fine ceramic sieve. This type of clay teapot brings out the umami flavour and reduces the bitterness of the tea. Alternatively, a black tokoname kyusu can be used, which is a good all-rounder for preparing green teas.

Recommended Storage

A high-quality tea caddy made of cherry bark (solid wood, kabazaiku chazutsu) is ideal, though any airtight tea caddy with internal coating will suffice.
